Five Recipes with Sunbaked Roast

1. Sunbaked Roast Chicken

  • 500 g chicken thighs
  • 2 tbsp Sunbaked Roast
  • 2 tbsp thick yoghurt
  • 1 tbsp oil
  • 1 tsp ginger-garlic paste
  • Salt

Mix everything and marinate for 1–4 hours.

Roast at 220°C or cook in a hot pan until deeply browned and cooked through.

Finish with lemon and fresh coriander.

The hero application: nutty, roasted, chilli-forward chicken with beautifully charred edges.


2. Sunbaked Roast Paneer

  • 250 g paneer
  • 1½ tbsp Sunbaked Roast
  • 2 tbsp yoghurt
  • 1 tbsp oil
  • 1 tsp lemon juice
  • Onion + capsicum
  • Salt

Coat the paneer and vegetables and marinate for 30–60 minutes.

Thread onto skewers and grill or pan-fry until charred.

Finish with lemon and coriander.

Ragi + uchelu make this much more interesting than a standard tikka.


3. Sunbaked Roast Sweet Potatoes

  • 500 g sweet potato
  • 1½ tbsp Sunbaked Roast
  • 1½ tbsp coconut oil
  • Salt
  • 1 tbsp grated coconut
  • Lemon

Cut the sweet potato into wedges and toss with the rub and oil.

Roast at 220°C for 25–30 minutes, turning once, until crisp around the edges.

Finish with grated coconut and lemon.

Sweet potato + ragi + roasted uchelu + Byadagi chilli = excellent.


4. Sunbaked Roast Prawns

  • 250 g cleaned prawns
  • 1½ tbsp Sunbaked Roast
  • 1 tbsp coconut oil
  • 1 tsp garlic, grated
  • 1 tsp lemon juice
  • Salt

Marinate for 15–20 minutes.

Cook in a ripping-hot pan for 2–3 minutes, turning once.

Finish with lemon and coriander.

The sweetness of the prawns works really nicely with the nutty, roasted character of ragi and uchelu.


5. Sunbaked Roast Egg Dosa

This one is the quick everyday recipe.

  • 2 eggs
  • 1 dosa
  • 1–1½ tsp Sunbaked Roast
  • 1 tsp ghee or oil
  • Sliced onion
  • Coriander

Make a thin omelette with the eggs and onions.

Sprinkle Sunbaked Roast over it while it's cooking, then fold and place inside a hot dosa.

Finish with a little ghee and coriander.

Five-minute breakfast/dinner, and a very good way to show that the rub isn't just for meat.
