Why Pongal Matters - To Tamil Nadu, and to Us

Pongal is more than a festival. In Tamil Nadu, it is a moment of pause, gratitude, and deep connection to the land that feeds us.

Celebrated at the end of the harvest season, Pongal marks the relationship between the farmer, the soil, the sun, and the food on our tables. It is one of the few festivals in India that centres the act of growing itself; and acknowledging not just abundance, but the labour, patience, and knowledge that make it possible.

At its heart, Pongal is about giving thanks:
to Surya, the sun that sustains crops;
to Bhoomi, for its generosity;
to cattle, for their role in farming;
and most importantly, to farmers, whose work often goes unseen, yet is foundational to everything we eat.

For us, this festival carries special meaning. Our work is rooted in ingredients - chillies, kokum, turmeric, onions, tomatoes, spices - and those ingredients begin their journey in fields tended by small farmers. Pongal is a reminder that flavour doesn’t start in a kitchen or a jar; it starts much earlier, with people who understand land, seasons, and soil intimately.

In celebrating Pongal, we celebrate sourcing with respect, working directly with farmers, and building food systems that honour where ingredients come from. It reinforces why we choose to work closely with growers, why seasonality matters, and why food should always carry a sense of place.

Pongal reminds us that food is not just nourishment, it is culture, livelihood, and legacy.
